Learn From Others
Have you ever given up before you started something?
I know I have. But sometimes we can lean into weaknesses and gain some skills by countless repetitions.
Did you know that it is possible for growth to occur in an are that you are not naturally gifted in? Often it happens because of the influences around you. Well in my case I had determined as a young middle schooler that I wanted to be influenced by some great chefs. I chose to watch some cooking shows here and there and it inspired me to become better at things that I hadn’t even realized was a possibility.
In the chef world the new guy that comes and try out for a spot in the restaurant they do it for free. They come in and the chef gives them a very specific task. Say fine dice onions that will be reduced down to almost nothing. So the flavor gets infused into the sauce but there are no visible chunks. Chef or the Sous Chef will observe and see how they do it. Maybe tell them a different way to do it and see if they can learn on the fly and put it into action. This process of working for free and being mentored is called “staging” not staging but “Stah-zhing”. Well the thing I chose to prepare on my home cooking adventures for my family was French toast. I worked hard on the recipe. I presented dozens of variations almost every week for months. I didn’t realize that it was the groundwork for a journey of falling in love with failing. One day the silence was replaced with “umm” and eventually it was head nods and “OH ummm, man thats good” to finally “ok James when are you opening a restaurant?”
Don’t turn away from the opportunity to master a craft. To be the best hand waver you possibly can. To walk people directly to their seat. To really get to know someone deeply over a few conversations over weeks of seeing them. There are some things that we are naturally gifted in and some things we have to work at. Lean in to the natural gifts and step up and continue to stagiaire.
Look for the opportunities to grow. I know so many of you already have. Thank you for that. I know I have grown in hospitality. Keep loving on people, with big open hearts.
